Ha! That is a great and valid question. The thing is that it's the teensiest about of vinegar: 1 teaspoon for 1.5 cups of avocado oil. It feels like it wouldn't make a difference but it adds the subtlest amount of brightness, just enough to get you guessing :)

Justine says 2 weeks in the fridge. My guess is that it will be fine for a little bit longer than that.
