I have all of these ingredients in my fridge. Just enough asparagus, but enough for it to be alone on a plate. Thank you for the recipe.

Your salad looks delicious and decidedly more healthy than my own "shaved asparagus" meal I prepared tonight: shaved asparagus and fettuccine tossed in a homemade ramp and walnut pesto. Asparagus really is one of the best ways to usher in spring. Cheers!

YUM! This salad made me think of pasta: I was thinking pappardelle, shaved asparagus, brown butter, walnuts, herbs.... yours sounds divine!!

WOW! Made this for Easter and it was the star of the meal. I'm still getting messages today about it. I don't know if I can eat asparagus any other way. The hardest part was peeling the asparagus as some of ours weren't super thick and our peeler was a little dull but it all came together so well with a very basic lemon vinagrette. Love this!

So nice to read this, Megan! Thanks for writing and sharing your notes — I'm sure the peeling process got a little tedious without a sharp peeler and without the ideal-shaped asparagus. The good news is that asparagus of all shapes and sizes should be more plentiful at most markets in the weeks ahead.

Is there a recipe for the lemon vinaigrette?

Expand full comment

Yes! It's in the google doc with the salad recipe and it's also on my blog: https://alexandracooks.com/2022/04/03/all-purpose-lemon-vinaigrette/

This looks soooooo good! Thank you for the video on asparagus prep, I don’t think I’ve ever done it quite right.

What other lettuce can I use - my hubby doesn’t like arugula

Mixed greens would work well in place of arugula.

I made this salad on Friday, a delicious complement to my cauliflower/green olive/ garlic/chile/gruyere pizza. And, yes of course I’ve preordered your pizza book, and a second one for my sister (won’t she be surprised 😊!) Thank you for all the great ideas and recipes!

I love shaved parmesan but I get a lot of breakage when trying to slice. Suggestions?

I had some trouble peeling the asparagus with my Y peeler - was not flush with the cutting board and would only peel half. the sides hit the board before the blad. Is there a trick to this that would help.

Bummer! I think the style of peeler can impede with the peeling for sure — even mine at the end will only go so far. You can put the rest of the asparagus thinly with a knife, and the knife-cut pieces will work fine.
