I'm so HAPPY you're away, journeying through Europe and unable to make romesco immediately :) Your latest post was so brilliant. It gave me chills and made me cry as I felt so simpatico with all of your emotions/reasoning. Every year we camp for three days in the Adirondacks where we lose connectivity about 10 minutes out from the site. The first day and leading up to that first day is so stressful and filled with moments of me wondering how I can bow out. By day 3 I never want to come home. Enjoy your travels!

Re: the beginning of vacation being so stressful…I feel you!! And we don’t have kids, so in theory, it should be much chiller. (But let’s just say that Day 1 of driving on the wrong side of the road was…not our best moment as a couple 🤣)
Incredibly it was not a problem, but that color is not ideal — the recipe instructs to stir during the roasting process, which I did not do and which I think would have prevented that color.

Q: The almonds in your photo look pretty dark after their stint in the oven — was that any problem?

THose are probably tree nuts. Not sure. I think sunflower seeds might work, though.
Is there a substitute for almonds? Allergic to tree nuts.
I think pine nuts would work but I might toast them separately stovetop over low heat while everything else roasts to ensure they don't burn.
Would pine nuts work for you?
