I am going to make these later today. I am almost certain it is the recipe (or super close) of bars I used to eat growing up. My friend’s mother used to make these peanut butter bars that were everyone’s favourites. When we heard her mother had made a batch, a bunch of us would walk over to her house at lunch time, and eat the whole tray. Can’t wait to try these. I have already sent this recipe to a few friends!

These were incredible. My husband took a bite, looked at my son, as said “You have no idea how lucky we are to have a mommy who makes things like this for us.” So thank YOU & Sarah for this easy and delicious recipe.

It's an Ankarsrum Stand Mixer. I love it for things like whipping cream and beating lots of egg whites for say an angel food cake, and overall I really like it, but I don't think I've taken full advantage of its many feature, especially for bread — I think one of its big selling points for bread bakers is that you can knead a lot of bread in it at one time. I never knead anymore, and I prefer mixing by hand, so I never use it for bread. When my Kitchen Aid stand mixer died, I replaced it with this one, and overall I love it, but I just don't use it that often. I use my food processor way more.

I'm so pleased to have recipes in weights as well! Often I won't bake any more if it's not presented that way. Although, if it's something I must make, I've resorted to weighing my measurements and writing it in the book so the next time, it's easier. These bars look really good. I got the book this week but haven't had the chance to look through it yet.
