Fantastic idea. Btw - I have been making your whipped ricotta with olive oil, honey and pistachios on repeat each week. Coupled with a garlic, olive oil and herb pizza crust - it is my idea of what heaven tastes like. So amazing!!! I love your recipes.

Also - your thin pizza crust in your book is amazing. I can't stop making it. I love the semolina in it. Thank you for all you post. This family is in love with you!!!

Awww Diane .... thank you so much for all of this!! It's so nice to read. That whipped ricotta has become an entertaining staple. Totally agree that paired with a simple, olive oil brushed pizza or flatbread, it is heaven. Thank you for writing 💕💕

I already had the chickpea recipe on the mean plan for next week, and will be experimenting with the naan! Where is that red lid from? Does it work on different sized pans!?

I have a stainless lid by Thomas Keller, pulled it out & forgot to use it. The naan was amazing. Probably would have been better if I’d remembered to use the lid.

Hi! And yes, it's from Made In: https://madeincookware.com/products/silicone-universal-cookware-lid/pomme-red (sold out unfortunately, but Google it bc I think other places carry it)

It works on various sized pans... I love it for those random pans I have that didn't come with lids.

For a decadent, laminated, version, make Buss Up Shut Paratha Roti using neo-dough. I use EVOO on the internal layers and ghee for the cooking (I used my cast iron pizza pan as a tava).

Two weeks in a row I’ve made dough for a homeschool get together. Both times canceled because of snow. Last week I used the grandma style pizza dough for this naan and it was superb! I made one pizza 18x13 + 4 naan.
