Oh my! I love celery root and I make an awesome Caesar salad and never thought about combining the two. Yes, of course, olives as long as you are taking a detour!
A perfect salad. And so many gussy it up with all sorts of things but this one is perfect. I make focaccia weekly and freeze it. It was the first bread to put our bakery in LA on the map. Stir it up, leave it, pour it out, form it, bake it. So easy. NO KNEADING.
Looks delicious! For the romaine, it looks like you keep it whole, intact, when chopping. I thought I had to separate leaves to wash individually but perhaps it’s not necessary. What method do you use for washing it? Maybe just the outer leaves?

Ali! YES! I've missed you! I hope you're well and life is good in your corner of the world. My Jim is studying pizza making from all sorts of folks, and in my eyes, is approaching Pizzaiolo status. We're even talking about a trip to Italy this fall so he can find the greats and we can taste-test all sorts. He's been making mini-pizzas throughout the week, experimenting with same-day dough, 24, 48, and 72-hour doughs, par-baking, etc. The results have been amazing. THANK YOU so much for being the initial inspiration for him to begin this yummy pursuit! :-)
This looks fantastic, BUT I have recently discovered pitted Gordal olives from Spain; they are green and - how this can be I do not know - but are so umani that I could not believe it, and I am substituting them for Castelvetrano all over the place.
